Homemade popovers

This very simple, basic recipe provides a great foundation for a variety of flavors.  The recipe is simple enough to add your favorite flavors – before and after baking.  The possibilities are endless. Check out just a few ways we’ve tried in the LivePretty kitchens.

Non-stick cooking spray (or use shortening to grease the tin)
2 eggs
1 cup milk
1 tablespoon vegetable oil (I’ve also used coconut oil)
1/4 tsp vanilla
1 cup all-purpose flour
Pinch coarse salt

Spray muffin tin really well. My reference recipes naturally use popover tins. I used muffin/cupcake tins.
Mix the wet ingredients.
Add flour and salt. Mix until well combined.
Fill muffin tin about half full.

Bake at 400 degrees for about 35 minutes. Keep an eye on them. When tops are a golden brown, they are typically done. Inside consistency will be similar to a croissant. Sometimes they lose their shape. It’s all good.
