The Perfect Halloween Meal

It’s Halloween evening.  Everyone is dressed in costume, trick-or-treat bags are in hand, and the candy is ready to be passed out to children as they cruise around the neighborhood.  At my house, our signature porch lamp “ghost” is lit and glaring at approaching trick-or-treaters.  Of course, the carved pumpkin is lit and ready.

As my grandchildren go trick-or-treating throughout the neighborhood, they (and their parents) will eventually decide they are hungry.  This is when my traditional chili cook-off menu is at it’s best.  I prepare large pots of Texas White Chili and traditional Chili Con Carne well in advance in anticipation of my hungry boys and ghouls.  I also put out bowls of toppings such as chopped green, yellow, and red peppers; sour cream; thinly sliced green onions; and bowls of shredded Monterey Jack cheese.  Corn chips are also served along with fresh-baked corn bread.

Every hungry trick-or-treater can partake in a warm meal when ever they want.  Before candy, of course.  One of the best parts about this meal is that it can be prepared ahead to be kept warm and ready to go at a moment’s notice.

The matriarch of Live Pretty, Roseddy, lives with her husband and children in Orlando, Florida. She is a native of Waynesburg, PA, but she has called the Sunshine State home for over thirty years. In addition to being a fantastic cook, Roseddy is an accomplished seamstress and former Home Economics instructor. Her flower arranging talents are the stuff of legend, and she is a valued member of her church’s altar guild.
