An Easy Way to Use up Broccoli Stems

We eat a lot of Broccoli in our house. Simple fresh steamed Broccoli with a dash of salt is my daughters’s favorite side. How did this mom make that happen? Honestly, I have no clue. She just loves it … eats it hand over fist as often as I make it. But, we do end up with a lot of the big Broccoli stems left. I was tossing them out one evening, and it dawned on me, this is good stuff. Just because she only wants the “trees,” or tops of the Broccoli, doesn’t mean we can find at least a few uses for the stems. I was on a mission.

So, I pulled out my ancient but still very useful Cuisinart and shredded those stems right up. You can simply stop there and use the stem shreds to make a nice salad topping, or a fish taco filling. Or you can give this simple broccoli soup recipe a try. Simple fresh ingredients and you have a hearty fall dinner or a fabulous lunch. Enjoy.

Simple Broccoli Stem Soup

3-4 cups shredded broccoli stems
1/2 finely chopped onion
2-3 cups chicken stock
1 tablespoon butter or olive oil
salt and pepper to taste

Shred the broccoli stems in your a food processor, or finely chop.

Melt butter in a 4 Quart pot.

Add shredded Broccoli and chicken stock.

Puree with an Immersion Blender or counter top blender until smooth.
