Everyday Mango Yogurt Parfait

An easy everyday breakfast that packs a nutritional punch.

Over the past year I have worked hard to get more protein into my breakfast.  But, since I am not an egg lover, I’ve stuck to protein smoothies and, more recently, Greek yogurt.  And I tell you, I have fallen in love with the versatility of this thick and protein-packed yogurt.  It is wonderful.

I have played with all sorts of ways of eating my yogurt, but my favorite is a balanced breakfast (or mid-day snack) of yogurt, fruit, nuts and some spices.

Then, after learning how to cut a mango last weekend at the Southeast Produce Council convention, which we attended courtesy of the great folks at Produce For Kids, I decided to try creating a breakfast parfait combining mango, a great fiber-rich fruit, with yogurt, almonds and some natural flavor.  The result is a beautiful and super easy breakfast parfait.

Everyday Mango Yogurt Parfait (Serves 1)
1, 6 oz Container of Non-fat Greek Yogurt (I prefer Fage)
1/2 Cup Cubed Mango
2 T Sliced Almonds (toasted or raw)
Cinnamon to taste
Honey to taste (optional if you are going free of all sugars)


Once you cut your mango following these steps, make long slices both ways in one side of the mango “cheek” to create cubes.  Then use a small knife to cut the cubes. (Much like you would do with an avocado).

Mix the yogurt, honey (I use 1 tsp of local honey) and 3-4 sprinkles of cinnamon.

Grab a pretty glass or bowl (I used a martini glass to make it bit more fancy). Layer half of your yogurt in the glass, followed by half of your mango and half of your sliced almonds, then repeat.

Eat and enjoy!
